I love all types of berries and can’t get enough lately of cranberries. It helps that organic cranberries are easy to find at this time of year and fairly inexpensive.
Cranberries are a source of vitamin C, manganese, and different antioxidants, including polyphenols, which may help to prevent cancer and heart disease, as well as boost the immune system. Cranberries and cranberry juice can prevent recurring urinary tract (UTI) and bladder infections. Because a lot of sugar is often added to cranberry juice, buy one that’s organic with about 10 grams of sugar in it. You need some sugar to offset the tartness, in my opinion. Drinking several glasses of cranberry juice recently cleared up a lingering UTI.
- 1 16 ounce bag fresh cranberries
- 2-3 Tbsp raw pure honey
- 1/2 cup fresh orange juice grate some zest from skin also
-
In a medium-size sauce pan, simmer the cranberries with the juice until all berries have popped open and have a gelatin-like texture.
2. Add the honey to taste.
3. Remove the mixture from the heat and allow it to come to room temperature before refrigerating it.
You can change things up by adding sliced almonds or walnuts and more fruit such as orange segments or pineapple chunks.
